RATATOUILLE – CLASSIC FRENCH VEGETABLE STEW

Ingredients

  • 250g eggplant (aubergine), sliced into rounds
  • 250g zucchini (courgette), sliced into rounds
  • 250g bell peppers, sliced
  • 250g tomatoes, peeled and quartered
  • 2 onions, peeled and chopped
  • 2 garlic cloves, minced
  • Olive oil
  • 1 bay leaf
  • 1 sprig thyme
  • Salt and pepper to taste

Instructions

1. Prepare the vegetables

Wash and slice all vegetables evenly.

To peel tomatoes, place them in boiling water for about 10 seconds, then remove the skin using a paring knife.

2. Pre-cook vegetables separately

Preheat the HomeCooker for 3 minutes at 175°C.

  • Add 2 tablespoons olive oil and cook eggplant for 5 minutes at 175°C. Season with salt and pepper, then remove.
  • Add 1 tablespoon olive oil and cook zucchini for 4 minutes at 175°C. Season and remove.
  • Repeat the same process for bell peppers.

3. Prepare the base

Add 2 tablespoons olive oil and sauté onions for 3 minutes at 175°C.
Add tomatoes and stir to form a base sauce.

4. Combine and simmer

Add pre-cooked vegetables (eggplant, zucchini, bell peppers) back into the pan.
Add bay leaf and thyme.
Add garlic, salt, and pepper to taste.
Cover and cook at 110°C for 30 minutes.

Ratatouille originates from the Provence region in southern France, often associated with the city of Nice. It traditionally uses seasonal summer vegetables found in home gardens.
